Hot Buttered Rum

I posted a little while ago about making a delicious drink called hot buttered rum while in Mammoth. Here's the recipe, based off of Emeril Lagasse's recipe via the Food Network, actually. Here's his original, at the link, and my updated version, below. I thought the original was a bit too sugary/rum-y and not spicy enough, so I made a couple of modifications. Enjoy!


Hot Buttered Rum

1 stick unsalted butter, softened
1 and 1/2 cups light brown sugar
1 and 1/2 teaspoons ground cinnamon
3/4 teaspoon nutmeg
Large pinch ground cloves
Pinch of salt
Dark rum
Boiling water

In a bowl, cream together the butter, sugar, cinnamon, nutmeg, cloves, and salt. Refrigerate until almost firm. Spoon about 2 tablespoons of the mixture into a mug, and then pour in a shot (or more, depending on your preference!) of rum. Top off the mixture with boiling water (to fill the mug), stirring well while pouring, and serve immediately.
